Bush Spice Tomato Sauce

    Step1

    Dice onions and tomatoes and leave in a bowl overnight

    Step2

    Boil onions and tomatoes, chop apples and add to tomatoes

    Step3

    Mix in ginger, garlic, pepperberry leaves and salt bush leaves and boil for 3 1/2 hours, stirring frequently

    Step4

    Add 3/4 cup EZY-sauce, sugar and salt

    Step5

    Boil for 1 1/2 hours, stirring frequently

    Step6

    Pass through mouli and pour into hot, sterilised bottles — makes about 4 litres.
